A rainy morning greeted our contestants at this week's Sizzlin' Salmon Showdown in Caledonia. Despite the weather, the contestants were excited and ready to put their recipes to the test. Both contestants brought a large audience to watch and encourage them as they grilled two excellent recipes. Fortunately, the rain cleared just in time for the event to get underway. This was the first week that a contestant has grilled salmon steaks; Hugh McGuire grilled his salmon steaks to perfection for his Alaskan grilled salmon steaks. The winner of the day was Scott Rozeboom, an experienced fisherman who brought the pictures to prove it. Scott prepared his delicious Scott's Grilled Citrus Salmon, and impressed the judges with his excellent table presentation. Congratulations, Scott!

2007 Sizzlin' Salmon Showdown Winner - Scott Rozeboom

Yield: 4 servings

Preparation Time: 15-30 minutes to cook depending on size.

Ingredients

1 to 2 oranges, thinly sliced
1 stick butter (1/2 cup), divided
1 fillet salmon (2 lbs.)
McCormick's California Style Lemon Pepper with Garlic and Onion
McCormick's Garlic Powder with Parsley
McCormick's Season All
McCormick's Lemon and Herb seasoning
Dill weed
Honey
1 lemon, halved
1 lime, halved
1 red onion, thinly sliced
1 yellow pepper, cut into strips
1 green pepper, cut into strips
1 red pepper, cut into strips
You'll also need:
Aluminum foil

Directions:

Place orange slices down the center of a large piece of aluminum foil and fold the edges to create a rim. Place half of the butter slices between the orange slices.

Lay salmon over orange slices and season with lemon pepper, garlic powder, season all, lemon and herb seasoning, dill weed and honey.

Squeeze juice from lemon and lime over the salmon. Scatter red onion slices and cut peppers over salmon and top with the remaining butter. Place a large piece of aluminum foil over the salmon sealing edges so all ingredients are covered.

Grill for about 15 to 30 minutes depending on the thickness of the fillet. Place cooked salmon and other ingredients on platter and serve hot.
